Curried Breakfast Potatoes all sorts of ways to kick off your day and boost your metabolism! 

1. Boil 6 Idaho potatoes (you can also use other potato breeds) in a pressure cooker on high heat until tender (after pressure builds and you hear the whistle, wait 2 minutes) and then turn off the heat.
2. Drain water, let potatoes cool for 5 minutes, and then dice (or slice).
3. Assemble spices - 3 tbsp curry powder, 2 tbsp cumin powder, 1 tbsp cumin seeds, 1 1/2 tsp salt (adjust to taste), 1 tsp garlic powder, 1 tsp ground coriander powder, 1/2 tsp turmeric powder, 1/2 tsp red chili powder, and 1 tsp mango powder. (optional: mustard seeds, curry leaves, and thai chilies)
4. Heat 1/4 cup oil in a skillet. 
5. Add spices and stir. 
6. Add potatoes and mix for 2-3 minutes.
7. Turn off heat, and adjust salt.
8. Garnish with 1 tsp garam masala, 1/2 tsp ground black pepper and fresh chopped cilantro. 
9. Additional optional garnishes: shredded cheese, chopped green onions/scallions, and/or sour cream. 
10. Serve on the side or stuff into a breakfast burrito.
